No two whiskeys mature alike. Each barrel develops its own extraction, evaporation, and oxygenation profile. At DEEP CASK, we separate oxygenation from evaporation and actively control both. The barrel provides extractives, while we define oxygenation and manage evaporation independently. As a result, each cask becomes a controlled environment, not a random vessel.
AirBungTM
At the heart of this approach is the patent-pending AirBung. It replaces the traditional wooden bung with an oxygen-selective insert, giving distillers a defined oxygen ingress rate instead of relying on natural barrel permeability. Oxygen exposure can be set with intent—while evaporation can be controlled independently. No pumps, hoses, or power are required. An AirBung adds a new maturation lever that works with the barrel. The wood continues to provide extractives, oxygenation follows a plan and evaporation can be independently minimized.
Our findings are encouraging, though development continues. Bench trials show that increasing oxygen in the headspace speeds key oxidative reactions. Early tests reach flavor milestones sooner. Still, larger warehouse trials are needed to confirm these results.
